1. Making coffee cream is really easy. Prepare the restricted coffee, pour it into a small bowl and let it cool completely. Pour the very cold cream into a planetary mixer or into a common bowl, add the icing sugar and start whipping it with the whisk.

2. As soon as it begins to thicken, add the coffee all at once and continue to whisk at high speed. The coffee cream will be ready when it has reached a foamy and compact consistency. Processing can take some time: it will be normal if at the beginning the cream seems to stop whipping, it's just a phase of the process.

3. Divide the coffee cream into 4 or more cups and decorate it with coffee beans, bitter cocoa or, if you prefer, chocolate flakes. Serve immediately.
